Description:
The Production Manager is responsible for overseeing the day-to-day manufacturing production of the bread production facility, ensuring efficient, safe, and cost-effective production while maintaining the highest standards of quality, food safety, and regulatory compliance in line with Irish and EU regulations.
Key Responsibilities
1. Production Management
Lead and manage daily bakery production (mixing, proofing, baking, slicing, packing).
Ensure production targets are met in line with customer demand and delivery schedules.
Monitor KPIs such as yield, waste, downtime, labour efficiency, and output.
Implement lean manufacturing and continuous improvement initiatives.
2. Food Safety & Compliance
Ensure compliance with:
· FSAI (Food Safety Authority of Ireland) regulations
· HACCP principles
· BRC
· EU food safety and hygiene legislation
Maintain audit readiness at all times.
Oversee traceability, allergen management, and quality control procedures.
3. Team Leadership & Development
· Lead, coach, and develop production supervisors and team leaders.
· Manage workforce planning, shift scheduling, and performance management.
· Promote a positive safety and quality culture.
· Support recruitment, onboarding, and training initiatives.
4. Health & Safety
· Ensure full compliance with Irish Health & Safety legislation.
· Conduct risk assessments and ensure safe systems of work.
· Lead incident investigations and corrective actions.
· Promote a strong safety-first culture across all shifts.
5. Financial & Budget Control
· Manage operational budgets.
· Monitor labour and overhead costs.
· Identify cost-saving opportunities without compromising quality.

Qualifications & Experience
Essential:
· 5+ years’ experience in food manufacturing production (bakery experience highly desirable)
· Proven experience managing teams in a fast-paced production environment
· Strong knowledge of HACCP and food safety regulations
· Experience managing budgets and KPIs
· Leadership and people management skills
· PC literate (word, excel, PowerPoint)
